Lotus Cookies

These cookies are the ideal entertainment snacks. There are cultural variants of this recipe, from a more buttery emphasis (not suitable for vegans) that might be found in Denmark to an option matcha green tea flavor and coloring that can be added into this recipe. For this recipe we continue our preference for margarine, although which kind you use is your choice. The cherry adds some color and variety to the uniform look, but the shape of the cookie is engaging enough and reminds of the lotus’ symbolic representation of enlightenment (before it’s promptly gobbled down).

Lotus Cookies

Ingredients 

150g margarine
60g icing sugar
1 tbsp milk/soy milk
1/2 tsp vanilla essence
180g flour
1/4 tsp baking powder
Red and green cherries

Beat the margarine and icing sugar until creamy, mix in the milk and vanilla essence until smooth, then fold in the flour and baking powder to form a soft dough. Put dough in a flower pattern mould and place the small cherries at the top’s centre. Bake at 160 degrees celsius for 15 minutes.
